Our Point of Sale: Where to Find Us

At present, our only physical store is located in Saint-Étienne-du-Grès, in the heart of the Alpilles, between Saint-Rémy-de-Provence and Avignon, where we proudly offer our handcrafted creations every day.

However, we have ambitious plans for the future and are working towards bringing the authenticity of Boulangerie Artisanale R&M to an international audience. Our Specialty: Pompe à Huile or Fougasse

Fougasse, a Treasure from Southern France

Pompe. à huile or Fougasse is one of the oldest French baking specialties. Its origins date back to Roman times, when a flat piece of dough was baked in the embers to test the oven's temperature before baking bread. Over the centuries, this simple preparation evolved into the fougasse we know today, becoming an iconic symbol of Provence and the Mediterranean region.

Recognizable by its distinctive elongated shape and decorative cuts resembling wheat stalks or leaves, fougasse is appreciated for both its artisanal appearance and its unique flavour. Beneath its lightly crisp crust lies a soft, fragrant crumb, rich in character thanks to slow fermentation and carefully selected ingredients.

Fougasse also holds a special place in Provençal culture through its sweet version, the famous Pompe à Huile. Made with olive oil, orange blossom water, and sometimes candied citrus fruits, it is one of the traditional 13 Christmas Desserts of Provence, a centuries-old celebration of sharing and generosity.

During the Christmas feast, Pompe à Huile is considered the centerpiece dessert and, according to tradition, should be broken by hand rather than cut with a knife, symbolizing prosperity and good fortune for the coming year.
